Emma and I also made chicken stock and then chicken and rice, it was a hit! We had a rotisserie chicken for lunch the other day and used it for our stock, after I took off the rest of the meat. I throw the chicken, half a onion, half a head of celery, couple carrots, salt and some oregano in a pot and filled it with water, just enough to cover the chocken and veggies. Cover the pot and bring to a boil, then uncover and cook on low heat for 2 1/2-3 hours. I then took everything out of the pot with my skimmer, I added more carrots, celery, onions and chicken back to the pot and brought to a boil, and added 2 cups of rice, and cooked until rice was tender 25-30 minutes. With the head of celery, I used everything but the stalks for the stock, then I used the stalks for the Chicken and Rice.
We have been keeping busy these last couple days! On Wednesday, we celebrated Emma's birthday at Craig's cruisers, with her BFF! I made her a Spider-Man fleece blanket, I found a cool and easy alternative way of putting it together instead of tieing it. I just bought a fleece blanket kit from Joanne's, I was able to get it for 50% off! I cut the corners and then the on the already marked lines, :) gotta love that! Then I cut a slit in every strand, except for the last two, about 2 inches from the blanket to about a inch up. All you do is grab the next strand through the slit, to get a braided effect, I tucked the ends in between the blanket. Then when you get to the last 3, after you pull the second to last one through, tie and tuck the last 2. I saw this on pinterest and can't believe how good it turned out and how easy it was! We also had a cookie meeting for Girl Scouts!! Emma set a goal of selling 400 boxes, she is shooting for a special prize and to get her registration paid for next year! We all started setting goals for the New Year, Emma with her cookies, Maddy's goal is to be potty trained by March, I might have helped Maddy set her goal ;) I set my Passion Party goals and Adam and I set our goal to staying on track to be debt free! I really feel 2014 is going to be good! I can't wait to see what's in store!
